Yam Fries are tremendously popular and for good reason.
The beta-carotene in yams makes them a healthy choice.
Yam fries in the oven are an even better choice than French fries that are deep fried.

6 large yams or sweet potatoes, scrubbed and cut into strips
2 Tbsp. extra virgin olive oil
1 Tbsp. paprika
1 tsp. cumin
sea salt

Preheat oven to 450 F.
In a large bowl, drizzle oil over yams and toss to coat evenly.
Add spices and toss to combine.
On a greased baking sheet place fries in a single layer leaving space between them so they get crispy on all sides (you may need to bake in batches).
Bake for 10 minutes, then flip fries over with a spatula.
Bake for another 10 minutes.
They should be tender on the inside and golden and crisp on the outside.
Sprinkle with sea salt to taste and serve with chipotle mayonnaise.
