Easy Roasted Garlic Yogurt Dip

If you don’t like the sharp taste of raw garlic, this roasted garlic yogurt dip is sure to go down a treat.

Ingredients:

• 1 head of garlic

• 2 cups of yogurt

• 2tbsp of extra virgin olive oil

• 1 jalapeno, finely chopped

• Salt and pepper to taste

• 2tbsp coriander, finely chopped

Method:

• Preheat the oven to 200°C. Peel the outermost layer of skin from the head of garlic and chop off the ends. With the rest of the skin on, wrap the clove of garlic in a piece of foil after drizzling it generously with olive oil, salt and pepper.

• Roast the garlic for 45 minutes to an hour until it has cooked completely and is soft.

• Let it cool completely and then squeeze out the roasted garlic pulp from the skins and set it aside.

• Hang the yogurt in a muslin cloth or cheese cloth over a bowl for 2-3 hours until most of the water has dripped away.

• Combine the yogurt with the roasted garlic pureé and the rest of the ingredients. Mix well and serve!

Cucumber, Dill and Yogurt Dip

This Greek-style dip is super refreshing and has a distinct, unique flavour.

Ingredients:

• 2 cups yogurt

• 1 cucumber

• ½ cup sour cream

• A pinch of crushed pepper

• 1tsp lemon juice

• 2-3tbsp dill, finely chopped

• 1 small clove of garlic, minced

• Salt to taste

Method:

• Line a bowl with a muslin or cheese cloth and pour the yogurt into it. Gather the corners of the cloth and tie it so that the yogurt rests neatly in the centre of the parcel.

• Hang this parcel over a bowl and allow the water to slowly drip away for 2-3 hours.

• Refrigerate the hung yogurt for an hour. This makes the yogurt dip extra refreshing.

• Next, peel, deseed and dice the cucumber into extremely small cubes. If you don’t want to chop it, you can use a coarse grater to grate it into shards. If you opt for the second method, don’t forget to squeeze out some of the water from the cucumber.

• Once the yogurt is chilled and the cucumber is chopped, simply combine all the ingredients and your dip is ready.

Blue Cheese Yogurt Dip

Perfect with buffalo wings or your favourite grilled vegetables and meats, a little bit of this blue cheese yogurt dip goes a seriously long way!

Ingredients:

• 1 cup Greek yogurt

• ½ cup sour cream

• ¼ cup blue cheese, crumbled

• Salt and pepper to taste

• ½ tsp paprika powder

Method:

• Whisk together all the ingredients except the blue cheese until the mixture is smooth and creamy.

• If it seems too thick, add a tablespoon or two of buttermilk or milk to loosen the mixture.

• Add the crumbled blue cheese and fold it through the dip to ensure that the small chunks are evenly distributed.

• Serve the dip chilled with anything from buffalo wings and barbeque ribs to nachos and multi-grain toasts.
